little old is now a swinger While many people In town make wine there Is also a group who have formed a the Georgetown Amateur Wine- makers Club with members ADVANTAGES one of the members some of the advantages of a club member in the exchange of redoes and methods the comparison of wines and ex periments In various methods You dont even have to drink wine to be a member but can take part In competitions with other Doug recently won the dry red table wine category and now will en ter the same wine in the Ont ario Open Wine competition held annually- Wine is judged on colour fla vour fermentation is ldlcated by the formation of a cap of skins on top of the juice or by a soaplike bubbly foam where skins ore not present One bottle of fermenting juice is enough to start the fer mentation of five gallons of crushed grapes WHITE WINE White to usually made from white grapes but some of the white wines ore made from the juice of coloured gra pes only Draw off the fermenting juice when the cap of skins has formed Place one end of the siphon under the cap near the bottom but above the sediment Siphon the liquid Into contain ers Juice remaining In the skins may be pressed tainer Stopper the openings I with clean absorbent cotton Allow fermentation to contin ue to completion usually Indic ated by no visible activity such as bubbling or motion in the mixture BED WINE Allow the Initial fermentation the skin fermentation to continue 72 hours or until the skins ore bleached in appear ance During this period push cap of skins into the ferm enting juice at least each day This ensures maximum colour Remove the liquid and add lit lbs of sugar per gallon Proceed as above After the fermentation to com plete usually in weeks or when sugar is utilized remove wine from sediment and odd potassium or bisulfite per gallon Allow to stand 23 weeks until It settles out and becomes clear Draw the wine off In bot tles stopper tightly and store in cool place More Know
