Meet the chef feeding the golfers at the Open by Dominik Kurek Oakville Beaver Staff 3 | Friday, July 19, 2013 | OAKVILLE BEAVER | www.insideHALTON.com Oakville chef Jamie Hussey has been feeding people his entire adult life, but starting Monday (July 22), his dishes will be served up in what is possibly the biggest test of his career. Hussey, 35, is the executive chef at Glen Abbey Golf Club and will be tasked with feeding 500-600 people on a daily basis when the local golf course hosts the RBC Canadian Open, which runs July 22-28. "I'd be lying if I said I didn't feel the pressure. This is a huge event. This is a nationally-recognized event. It's been at Glen Abbey for 26 years. It comes with a giant deal of history behind it... the people who are here and the people who have been here are proud (of it)," he said. "Of course, I feel a sense of pressure but it's also very exciting. It's very exciting to build these unique concepts and to make some really great Canadian food for people and showcase what we're all about." Hussey has been in the culinary business for nearly 18 years, and spent the last decade as an executive chef, working in Kingston, Ont. prior to arriving at Glen Abbey. Last summer, he took on the position at the golf club and moved to Oakville with his wife, where he had lived for a short period in his childhood when his family immigrated to Canada from England. Hussey said he feels as if he's come full circle in his career by joining the prestigious golf club. "It was a very strange and unique experience because I don't believe in that fate stuff," he said. "But the first chef I ever peeled potatoes for was the executive chef of Glen Abbey and he was a friend of my father's." The RBC Canadian Open is returning to Glen Abbey, where it was last held back-toback in 2008 and 2009. Big names in golf The tournament will showcase some big names in golf, including Ernie Els, Hunter Mahan and Luke Donald. Els and Mahan tied for fourth at the U.S. Open, while Donald finished eighth. The tournament will also feature 34-time PGA Tour winner Vijay Singh, three-time PGA Tour winner Camilo Villegas, defending Canadian Open champion Scott Piercy, world No. 5 Matt Kuchar, 2012 FedEx Cup champion and world No. 8 Brandt Snedeker, world No. 9 Graeme McDowell and two-time Canadian Open champion Jim Furyk. Mike Weir, Graham DeLaet, David Hearn, Brad Fritsch and Stephen Ames are among the notable Canadi- in the Glen Abbey clubhouse, which will be used as the base of operations for the Open and where the food and beverage program will be held. Catering to diets He will lead a team of approximately 25 people and has prepared seven different menus, one for each day. "You just have a lot more things to think about and consider," Hussey said of cooking for the Canadian Open. "Some athletes have very stringent diets. They're trying to maintain their stamina, they're trying to maintain peak performance levels. When you're trying to cater to a very specific group of people, but allowing for everyone else to enjoy the experience, I think having the right kind of menu with that in mind is what makes it unique." He said there will be lots of fresh vegetables and salads, and lots of different types of protein (just not in large portions). "If you want to come in and you need that four ounces of protein with three ounces of veg, it's very accessible to you. It's not heavily laden with butter and sauces. It's very fresh cooking," he said. The clubhouse will feature a number of buffet stations, where there will be a selection of six or seven salads.
