Ein Stein Wine House brings art of winemaking to Oakville When Vlad Prostran came to Canada in 1992, he started working, almost immediately, at Ein Stein Wine House. Though his English skills were limited, then-owners Jock and Cindy Fairbairn gave him the opportunity to work his way from cleaning to managing, before becoming partner and eventually owner of the independent wine store. Prostran knew a lot about wine. Having come from the former Yugoslavia in a part of Croatia that's well known for wine making, he had a firm grasp on the process, but he still credits his success to the kindness of the Fairbairns. He recently took over ownership of Ein Stein Wine House, which has been Oakville's oldest and largest wine making store since the early `90s. In fact, Ein Stein Wine House is so big it's the fourth-largest independent wine store in all of Ontario a fact Prostran is very proud of. Today he runs the store with the help of his family, including three grown children, who are all involved in the day-to-day operations. He describes the running of the store as demanding, but very rewarding, as is evident by the number of awards it as won. When customers walk through the doors they can expect to be walked through the entire wine making process. Prostran or his professional staff explain every step, the difference between the grapes, ultimately leaving the decision on which wine to make up to the customer. "I don't want them to make something they don't like," he says. It's a meeting that can take up to an hour depending on how much information the customer needs. Then they just pay and wait for their wine to ferment. Depending on the grape selected, the fermentation process takes anywhere from one to two months, at which time the customer is called to come in to bottle it. Customers can bring their own bottles, or buy some at Ein Stein Wine House. A wine kit from Ein Stein Wine House always comes with 31 bottles of wine and can range anywhere from $3 to $7 a bottle. Though the wine is ready to be bottled after just a couple of months, Prostran recommends letting the wine rest much longer. "A $7 bottle of wine left for a year becomes a $25 bottle of wine," he says. Though many people are too eager to taste the wine to wait that long he encourages them to try to ensure they are drinking it at its peak. "Our RJS Craft Winemaking kits are the best on the market."
