Local tea expert to speak at Canadian Club The Canadian Club of Halton Peel is hosting certified tea specialist Gillian Niblett on Thursday, Feb. 19 at the Oakville Conference Centre. Niblett has a professional level designation from the Specialty Tea Institute in the U.S. and travelled to tea gardens in India and China. She is best-known locally for being the founder and past owner of Tea At The White House, a popular tea room and tea shop formerly located in Waterdown, Ont. After selling the business in 2011, Gillian and business partner and pastry chef, Lori Wiggins, formed the Oakville-based Niblett and Wiggins ­ Purveyors of High Tea. Niblett's presentation reviews the history of tea -- where it was discovered, how and where it grows, the drying process that results in green, white, oolong and black teas, why and how tea spread around the world, as well as tea ceremonies from around the world. Registration for the dinner and a cash bar open at 6 p.m., followed by the dinner and speaker from 7-9:30 p.m. The Oakville Conference Centre is located at 2515 Wyecroft Rd. The cost to attend the Feb. 19 presentation is $35 for club members, $45 for non-members, and $20 for students. Club memberships will also be available for purchase. Currently celebrating its 29th season, the not-for-profit, volunteer-driven Canadian Club of Halton Peel has been presenting guest dinner speakers on a wide range of subjects since 1986.
