I use left-over turkey meat in many different ways that are well appreciated by friends and family. Some dishes are Turkey Phyllo Triangles as an appetizer, Turkey Ravioli, Turkey Rice Salad, and Turkey Asian Stir-Fries. The Ontario Turkey Producers' Marketing Board publishes a recipe booklet entitled Turkey Temptations -- Delicious recipes fo r leftover turkey.
