During the stages of ripening, in midsummer, the growers will cut half of the bunches off the grapevines. All the goodness will now go to those remaining on the vine. Come harvest ing time, the ripe bunches are now much fuller of fruit and extracts, result ing in a much shorter fermentation peri od and that adds much less of the unde_______________ sirable tannins to the wines, resulting in a smoother and early-maturing Barolo. If you would like to try for yourself, the FONTANAFREDDA 95 Barolo is a regular listing under CSPC20214 for $27.55, not a cheap wine by no means, but one of the best you can buy. With a complexity that rivals anything from the Bordeaux, the wine is smooth enough to drink now or age for another twenty years.
