If one talks about Italian wines, such greats as Chianti Classico Reserva, perhaps a Brunello or even a Barolo will dominate the converâ€" sation more often than not. Needless to say, these wines usually dominate where cost is also conâ€" cerned. Usually, the winemaker who knows his craft has the least influâ€" ence on the wine, with the soil and climatic conditions being the preâ€" dominant factors. Not so in an Amarone, as here it is permissible to cheat a little. To help nature along is probably a better explanaâ€" tion. Centuries of experimenting by local winemakers have found that three local varieties are most suitâ€" able for a good Amarone. Rondinella gives color and tannin while the final grape, the Molinara, rounds off the wine by adding structure and a good alcohol content. As with the selection of the grapes, many years of study and attention to detail go into the selecâ€" tion of the prime vineyard sites, while much care goes into picking the healthiest and ripest bunches of grapes which are then taken to an ideal place to undergo the ‘appassiâ€" mento", the drying process. Here, on straw mats, the grapes are now dried until they take on the consisâ€" tency of raisins before gently being pressed and permitted to ferment during the cool days of January and February. The wine that emerges after about 50 days is still someâ€" what on the sweet side, rich and, of course, full of the aroma of ripe fruit and flowers. There are always a few Amarones at Vintages, but only the Amarone Classico from Negrar is a general listing to be found under CSPC 44784 for $12.55 a bottle. This is a great price for such a wine, especially when one considers how much a good Barolo will cost. As a matter of fact, I can‘t even find a good bottle of Chianti Classico for this price any more. 156 Third Line, Oakville 827â€"3851 10:30 a.m. Morning Worship hool Nursery Provided ALL WELCOME Church School
