The source of that smell is one of downtown Oakville's newest restaurants, Doughbox. "We're casual. Come as you are. It's a casual environment with some pop and jazz," said re- gional manager of Doughbox Ad- am Durka. He describes Dough- box as "Italian-style food with a traditional wood-fire oven con- cept with the Neapolitan style thin crust pizza." Customers can choose from specialty pizzas like Classic Mar- garita and Wild Pepperoni. But where Doughbox comes alive is with the build-your-own pizza. Customers get a chance to make a 12-inch dough their canvas. Cheeses, meats (both Halal and not) and vegetables ranging from jalapenos to artichokes are in the visitor's palette. Cauliflow- er dough, gluten-free dough and vegan cheese are aso available. "I think it's part of the downtown culture," Durka said. "People like to walk, to pop their heads in and people like to window shop." Doughbox got its start in Ham- ilton. Its flagship shop is located just across the street from the McMaster University campus on the corner of Norfolk Street South and Highway 8. They have locations in Mississauga, Toron- to and Woodstock among others. The shop came to Oakville when future franchise owner Arif Rashidul saw the Hamilton store and fell in love with its con- cept. He began talks with the company to build a franchise. Ini- tially, they picked Burlington, but no site was available. "We found the site here in downtown Oakville, which is fan- tastic. It's a very vibrant (town), with a lot of foot traffic," Durka said. "We have a lot of great local residents that live right around us along the Lake, along Robin- son Street and all around us. When you first look at this loca- tion, it's like wow there's a lot of retail, a lot of stores, a lot of res- taurants. But when you go to the side streets, there's a lot of resi- dents in the area." Doughbox is taking part in the Taste of Oakville and is looking into patio dining for the summer.
