mean famine prices and as usual the wheat grow er wouldnt be in a position to bene fit thereto another angle would be to findthe necessary four dollars per acre with which to pay those grain growers for not growing wheat most of us dig up the- extra taxes willingly as long as we think the gov ernment are getting full value for the money expended but when they start paying it out to grain growers for not growing wheat we lose that willing- neas to dig up the extra taxes we noticed an article in one of the exchanges recently that mentioned that england still exported snuff we used to live in the lumbering country tn northern ontario and we sold snuff to lumber jacks but we hadnt thought of it even for a long tune the article referred to above mentioned that during the last year of peace england had exported 662 tons qt snuff most or it is used in insect powder however 6 tons of it was used for human consumption it as the name would indicate is sniffed up the nose however much of it is now placed inside the mouth between the gums and the cheek most of the lumber jacks that we sold snuff to came from the scandinavian countries and the snuff itself came in small tin cans at one time snuff was quite fashionable and was carried on the person in jewelled boxes and was of fered to the other fellow much the same way that you might offer them a cigarette today in lost weeks column we mentioned that lor this week we would have something to say about gluten instead of another ingredient that we use in the making of bread perhaps you have at times taken a handful or wheat and placing it in your mouth have chewed it for a time and then found that you had a mouthful of a substance somewhat similar to that of chewing gum that gumlike sub stance was gluten and what actually happened was that your saliva sup plied both heat and moisture to the wheat the moisture had washed the starch out of the mass and having i swallowed the starch you had the i gluten left curiously enough no 1 other grain contains gluten it is the i protein of wheat and in the finished loaf of bread it is the gluten that pro vides the framework for the loaf and it also gives it shape gluten com prises 36 of hard wheat flour glut en varies both in quality and in quan tity in the same varieties of wheat from year to year and it also varies this way in the different kinds of wheat compared with one- another for instance ordinary fall wheat which by the way is used to make pas try flour has less gluten and it la also poorer in quality than is the gluten from hard spring wheat this is the reason that pastry flour makes more tender pde paste for instance than would spring wheat flour another variety of fall wheat known as durum wheat has a very stubborn gluten that makes flour made from that kind of wheat suitable ror the making of macaroni to illustrate that stub- bomess the gluten from durum wheat would take at least twelve hours to develop to its optimum whereas un der like conditions the gluten from hard spring wheat would develop in three hours gluten is grey in color not white like flour and it has a very peculiar reel to it unlike any other substance that we know of in glads irises and lilies in the world of floriculture and i must confess i have been in the game for nearly threequarters or a century i can well remember with what delight i ran to my mother with the first iris i ever saw and she cal led it a purple dag thirty or forty years later j set out to get together all i could of these wonderful flowers and what a delight ful time i had buying a few here and there and exchanging with friends in terested in the same hobby up void downs in a few years the collection had not only grown but multiplied and in cluded over 200 varieties i was begin ning to feel quite proud of a and al the more so because it had become the source of a nice little revenue from the sale of plants butprjde goeth before a fall and i had thewlnd taken out of my sousi when the american iris society was formed about twenty years ago their object was to encourage the growing of the best only and discourage the grcving of thousands that had been introduced and had been superseded by newer and better ones the for- mer were given high ratings and the latter were blacklisted i then began to realize i had far too many in the latter class and decided on a slaughter i called up a lot of my friends to come and get all they wanted gratis and they came with cars and trucks as a final clean up a wellknown seed house got two truck loads of them a new start before letting them all go however i had set out a new plantation with a few plants of about so to 60 varieties i liked best then began the race u try and keep up with the best as lis ted by the axs i got catalogs from the outstanding american grow- and began to add a couple of doz en new varieties every year the collection is now back to its old dimensions but oh what a difference in the quality that little purple flag of long ago is a puny pigmy alongside of its giant progeny in all the glorious combinations of colors of trie rainbow but one has to go some to keep up with our american cousins one of the leading american growers publish es in his catalog every year a list of the best 100 irises of the preceding year these are grouped in 17 clas ses giving the widest possible range of colors how best determined to give some idea of the methods used to determine what are the best varieties let us quote the secretary of i the american iris society cooper ating with societies in prance and england the work is now international in scope iris shows are sponsored in all parts of the country accredited judges are appointed annually men and women who know iris a system of awards has been wo out whereby new introductions of merit compete with each other for the high est honor or all the dykes medal the late henry dykes waa secretary of the royal h society of england whom we had the pleasure of meeting when visiting england in 1912 and to whom we were greatly in debted for letters of introduction which gave us a welcome to many of the finest estates and gardens of eng land hlsoo honor attached to an award of the american iris society scores or men and women from coast to coast who are known to have a thorough know ledge of what constitutes a good iris are sent ballots and rating blanks pri or to each flowering season after the irises have finished blooming the blanks having been filled out are mailed to a central chairman and the returns tabulated honorable mention is given to a restricted number of the moat outstanding sorts the next highest award award of merit can go only to those varieties which have previously received an honorable men tion and here again the number is restricted the greatest possible hon or for an iris the dykes medal must go to a flower which had previously won an award and which has been in commerce sufficiently long to have proven its reliability under many con ditions of weather soil and climate runner up for this award is a consid erable honor in itself in addition to all this voting many or the leading iris fans make a motor tour in the flowering season and visit as many as possible of the best iris gardens in the states- there will be a great gathering of them at nasi vine tennessee called the iris city of the world when they get together for the annual meeting of the ais some time in may to be up to date to keep right up to date with this list of 100 beet irises would cost a nice ittle sum of money for the out standing new varieties are usually pri ced from 10 to 8500 per plant but fortunately iris multiply so rapidly that in a few years any of these high- priced ones can be paircbased for as many cents for a couple of douara one may now get a dceen reel top- notch varieties from most any up-to- date grower a year or so ago i had the pleasure of meeting at miss boacklocks beau tiful garden at mewtowvale
