This treatment does not improve the quality of the milk, neither does it improve the flavor. Then why is pasteurization necessary? In answer we quote from a prominent authority. “The necessity of pasteurizing the general supply of milk is caused by the possible absence of some care in its production and handling, and the length of time it is held between drawing from the cow and delivery to the consumer, together with the fact that the cows are not subject to the tuberculin test. " On the Arcady Farms the cows have allbeen subject to the tuberculin test, the milk is produced and handled with extreme care it is delivered strictly fresh direct from the farm to the consumer.
