The very Jow prices of the past few seasons were partly accounted for by the- largo addi­ tion of grain fed winter western maka, and lieuce resulted the theory thatHhe retention of the entire sffumer dairies for winter supplies was no longer re­ quired, and that it was necessary that dairy butter in the old dairy districts Should be sold and got out of the way fresh from the churn in order that live­ ly desirable winter market* might re­ sult. This theory this winter, was nearly reduced 1o practice, and the markets are the better for it. There are very few entire New York State dairies of early tyitter on hand. The supply is almost altogether of fresh made stock,and yet there is no butter famine.
