So many people will eat hash in a restaurant but turn up their noses at the "home-made variety. The restaurant hash is usually served crisp-and appetizing While so often the lady of the house tries to utilize all of the fat and in the doing spoils the h«ah. Try it this way some time. Left-over beef -- I. . 1 or 2 onions -- Leftover boiled potatoes Green pepper -- Remove most of the fat from meat and chop coursely. Chop or thinly slice onion and fry for 2 minutes in Crisco. Add potatoes, eoursely chopped, and fry few minutes. Lastly, add meat and season, A finely cut green pepper or a teaspoon of dried pepper flakes may be added. Hfclf a lobe of garlic may be added also and removed later (if you can find it). This, makes a crisp dry hash which may be served with re-heated gravy for those who like it. moist. Catsup or horseradish sauce may be used if preferred by some. With the coil of meat at present levels, one could save leftover bits of steak or roasts or even stews to add to hash. That dab of left-over potato -- even mashed -- may be added. After all, hash means "mess" hut i| can be a delectable mess. * Add shortening a little at a timtf it more is needed. V. • Beans, canned by the flim* pack method retain more flavor, freshness and crispness than beans canned by the pre-cooked method. The raw-pack method, tested by the U. S. Department of Agriculture, is both convenient and safe. It saves jar heating and pre-cooking and requires no longer processing time than the old pre-cook method. There is one disadvantage in the new method, however. You wrfi't be able to get quite so many beans in a jar as when the beans are pre-cooked. This is a point to consider if jars and storage space are limited, says Geraldine Acker, foods specialist, University of Illinois. - Here are the directions foe raw-pack canning: ^ •Wash the beans, trim the fends and cut the beans into one-inch pieces. ^ick the Taw'beans tightly in glass jars to within one-half inch of the top. Cover with boiling water, leaving one-half inch of head space at the top of the jar. Add one-half teaspoon of salt to each pint--one teaspoon to quarts. Adjust the jar lids. Process in the pressure canner at 10 pounds' pressure. Pint jars take 20 minutes, quarts take 25 minutes. If containers are not the self-sealing type, complete the seal as coon as you remove the jars from the canner.
