But be sure the saucepan is deep enough to hold "pint jars standing on a rack and will leave enough room at the top to per- • mlt locking the lid. "Gerldine Acker, foods specialist sit the University of Illinois, also r&toftimends carefully reading the instructions that come with your pressure saucepan. There are many different makes on the market, and all of them differ Slightly. i-A pressure saucepan is a handy piece of equipment for canning small amounts of fruit and vegetables as they ripen in yoajr garden. Then, too, you may liaVe a pressure saucepan but no pressure canner. Pressure saucepans hold 3 or 4 pint jars. Since they heat much faster then regular canners, new canning times had to be developed. Because the time has to be exact, it is important to follow directions given in the handbook that came with the equipment. Make sure your pressure saucepan is in good condition before you use it for canning. Miss ACker recommends checking the gasket, which is made of rubber Or rubber-like compounds. The g&Sket assures a tighter seal and prevents steam leakage. Therefore be sure to replace it as needed. If the safety plugs blow out or melt down from excessive pressure or dangerously high temperature, replace them. Remember, they are supposed to go into action in such an emergency and are therefore important. As you know, the vents control the air and permit the release of steam from the saucepan. Weight gages control pressure and. release excess steam. Dial gages have additional safety vents. It's a good practice to have the diai gage checked for accuracy once a year if it is removable. Your county home adviser or the home service agent of the electric or gas company may be able to check equipment for you or to tell you where the checking can be done locally. If major repairs are needed, it may be necessary to send the equipment to the manufacturer. If so, pack it carefully and label it "Fragile." Here's a situation in which a back view tells a better story than one showing faces. Sometimes It's a Good Idea To Take a Back View The appealing picture above is proof that it is indeed a good idea to take a back view on occasion. While we certainly want most of the snapshots of our favorite people to show their faces, once in a while you can take one with their backs to the camera that is very expressive. This picture of three young misses is just as expressive as though they were facing the camera, maybe more so. For the person who knows them, it would be possible to guess exactly what their faces were showing at the moment. You could see the pleased and somewhat determined look on the face of the young miss in the middle, whose short legs are achieving a victory over the steps. Another thing to note about this picture is the camera angle. We've written before about how it pays to look up or down at your subject on occasion rather than to invariably shoot straight on. In this shot, the camera was definitely looking up. This helps give the feeling of motion, as well as giving the snapshot a wonderfully neutral sky background. The subjects stand out against it. There's nothing to attract the viewer's eye or attention from them. i. All in all, it's a snapshot that proves it's a good idea to try something different once in awhile. Vary the pose, vary the angle for a change of pace in your pictures and to add interest to your , snapshot books. --John Van Guilder It Pays to Advertise In The McHenry Plaindealer Central Garage FRED J.
