IN MEMORIAM In loving memory of our beloved mother, Christine Stilling, who passed away eight years ago on Jan. 1, 1953. A precious one from us is gone' A voice we loved is stilled A place is vacant in our midst Which never can be filled. Children and Grandchildren. For effective use of your home freezer, freeze only foods that are not unfavorably affected during storage. This is the advice of Bette Schaffner, University of Illinois home economist. Avoid freezing foods that get their flavor from cloves, green pepper, garlic, pimento and sage. These flavors intensify during freezer stoi'age. And while this change isn't harmful, it may be objectionable. Foods seasoned with onions are equally disappointing after being frozen, since onions weaken in flavor. Frozen cooked meat tends to have a warmed-up flavor when reheated. For a more pleasing flavor, freeze the raw meat and cook after thawing. Potatoes frozen in chunks become mushy when thawed. Therefore, it is advisable to add fresh potatoes to frozen st.ew or other mixtures when preparing dishes to serve. i When preparing a casserole containing vegetables to be frozen, slightly undercook it to avoid overcooking of vegetables in the finished dish. Frozen white sauce thickened with flour or cornstarch tends to-«epaffate*when thawed. To prevent it, freeze only the meat and broth and prepare the sauce just before serving. Custard-type pie fillings have a poor consistency after freezing. You'll get a more appealing pie if you make fresh cream filling. For safety's sake, never trj£ to freeze a stuffed turkey. The' stuffing may spoil before the turkey is thoroughly frozen. Remember, too, that food must be top quality when frozen if it is to have a good quality when thawed. JOHN M. FREUND John M.
