COOKS CORNER By Marie Schaettgen During the season when green vegetables are not always fresh and plentiful and your family would like a change from the frozen or canned vegetables, why not try them on onions in a different manner? Next time you shop, pick out a bag or a few pounds of small yellow onions and prepare them thus (Double this recipe for four or if you like onions). Escalloped Onions 1 cup cooked onions % cup white sauce 3 Tbsp. bread crumbs* 2 Tbsp. butter Boil onions until tender but not overdone or soft. Prepare white sauce according to your favorite recipe or substitute one half can of cream of vegetable soup. Mix the onions with white sauce or soup and pour into baking dish. Melt butter and add bread chumbs. Place the crumbs on top of onions. Bake in hot oven until crumbs are golden brown. If you prefer not to use the canned soup you might add a few bits of cooked carrot or perhaps a few tbsps. of left-over cooked vegetable.
