HISTORICAL GROUP CONTINUES DRIVE TO SAVE CABIN When the McHehry County Historical society decided to conduct a campaign through the elementary schools of the county to collect pennies to save the log cabin, their primary interest was to involve young children in their heritage. The money was to be incidental to bringing to their attention a tangible evidence of how the early pioneers lived while settling this county. It was thought that by discussing the preservation of the log cabin it could be tied in with their social studies and the observation of Lincoln's birthday in February. A follow-up letter was sent to those who did not respond to the first -letter, asking them to again take it up with their boards and the period of April 12 through 26 was set. This will tie in With the 100th anniversary of Lincoln's assassination and death on April 15. The teachers and principals who participated report the children were quite interested in the cabin project and look forward to its restoration. Out of the forty-eight schools asked to participate, twelve asked for the cartons and have returned them. From these twelve, over $200 has been collected. As soon as the cartons are returned from those schools asking to participate from April 12 to 26, a full report will be made. If any school wishes to reconsider and participate, a request for cartons can be made to the society at Box 3, Woodstock. If you a~re among those who do need another, or if your family likes eggs at any time, try them in this manner and. call it the main course Potatoes and Epgs Start with mashed potatoes and end with a tasty casserole 2 tsp. finely chopped onion 3 Tbsp. flour tsp. salt '2 tsp. pepper 2 cups milk 8 boiled eggs 1 cup grated American cheese Line a well buttered casserole with mashed potatoes (fluf fy>. Simmer onion in the melt ed butter until just tender. Blend in flour after, butter has cooled. Add milk slowly and cook until mixture boils and thickens. Watch and stir constantly. Add grated cheese. Arrange the boiled, peeled eggs (which have been cut in halves) in casserole and cover with the cheese sauce. Brown lightly in broiler 4" from heat. Serve with salad and buttered peas. Sometimes it is hard to find something that an underweight child with a "finicky" appetite will like enough to ask for more. This recipe was "concocted" by me in trying to appeal to the appetite of a small friend. I call it noodle pancake. Noodle Pancake 1 cup very fine noodles 1 egg butter salt - pepper Cook noodles in boiling water until soft -- if very fine 5 minutes should do. Drain well and cool. In bowl beat the egg slightly and season both egg and the noodles. Mix the egg with noodles and pour into hot butter in skillet. Fry until golden brown on one side, turn and brown other side. Serve piping hot with more butter on top. If others like it, make enough for the family and fry in large skillet and serve cut into wedges. For adults, a little minced onion and green pepper may be lightly cooked and added to mixture. Another variation would be to add some finely chopped ham, which may be cooked with the onion and pepper. Try other combinations but for children stay with the milder flavor of noodles and eggs.
