Newlywcdi Wins Scholarship Lenten Fare In Tasty Dish Take two cans of tuna, a skillet, and a classic Oriental recipe. Then take a few moments in the kitchen, ten or so should do it, and you'll have a quick and delicious main dish, ideal for the family. The skillet technique is not only fast; it's nutritionally correct. The quick "crisp-tender" cooking of the vegetables protects their vitamin content. A thrifty bonus is the use of the vegetable oil from the cans of tuna for sauteeing. And tuna's complete protein compares favorable with that of lean meat, a happy note for the homemaker planning Lenten menus. Tuna Oriental is as handsome to look at as it is good to eat. Bright green pepper strips, pale green scallions, and creamy chunks of tuna combine with mushroom slices in a harmonious blend of texture, color, and flavor. Serve Tuna Oriental with fluffy rice for maximum authenticity, or packaged precooked rice if you're on the go. Either way, it's delectable.
