Savory Beef Stew With Dumpling's Pleasing the family is easy, when you choose this savory beef stew topped with light-as-a-feather dumplings, for everyone, it seems, loves the combination. In this modern day version of an old fashioned classic, the stew begins with meat chunks of canned roast beef with gravy. The hefty cubes of meat are all lean beef with no waste of fat or bone. The gravy is a homogenized blend of the meat juices and a subtle blend of seasonings. Fresh chopped onion, sliced celery and mixed vegetables add complimentary color and flavor accents to the stew itself. The dumplings, too, are made the "quick" way with packaged biscuit mix. Additions of chopped parsley and minced pimiento add color accents. With such a hearty main dish, additional menu components need only be a salad and beverage, with dessert a sherbet parfait served with sugar cookies. Beef SteW With Dumplings 2 cans (12 ounces each) roast beef with gravy 1% cups prepared biscuit mix % cup milk 1 tablespoon chopped parsley 1 tablespoon chopped pimiento 2 tablespoons butter hi cup chopped onion Vz cup sliced celery 1 can (IQV2 ounces) beef bouillon 1 package (10 ounces) frozen mixed vegetables Saute onion and celery in butter until onion is transparent. Add bouillon, 1 can water and frozen mixed vegetables. Bring to a boil. Add roast beef with gravy. Stir to blend and continue to cook, over medium temperature until mixture comes to a boil. To prepare dumplings, combine biscuit mix, parsley and pimiento. Add milk and stir with a fork until mixture leaves the sides of the bowl.
