Cooking Tips When planning family menus, don't overlook lamb. Geraldine Acker, University of Illinois Extension foods specialist, points out that aU iamb cuts -- with the possible exception of the shank -- are tender and can be prepared quickly by dry-heat methods such as broiling or roasting. But lambcaialsobecookedny the longer, moist-heat methods, such as braising, shewing and simmering. And these methods allow you to hold food for latecomers and still keep it at the peak of goodness. Because of its natural tenderness, lamb is ideal for outdoor cookery. Cubes of shoulder meat make excellent kabobs. Rolled leg or shoulder roasts, loin or shoulder chops, spareribs and lamburgers are good choices for the grill or r'otfsseries. For the most economical lamb cuts, the shoulder provides arm and blade chops that are as tasty as rib or loin chops and often meatier. Cubes of shoulder meat can also be used in stews. Roast lamb at a low temperature - 300 to 325 degrees. Low temperatures reduce shrinkage, assure juiciness and tenderness and retain the natural flavor. TIME OUT ...
