For something really different, create your own wild, imaginative shish kebab. Cook your shish kebab on the spit of a rotisserie or on individual skewers placed on the grid of a gas grill; select foods that cook in about the same time for use on the same skewer. How about these for an unusual dish: Cubed ham, green pepper pieces and pineapple chunks basted with pineapple juice while grilling; or small raw oysters dipped in melted butter and placed in mushroom caps; or egg­ plant cubes, small onions, cherry tomatoes or wedges marinated in garlic-flavored salad oil before grilling; or for dessert, orange slices and pieces of banana brushed with honey before grilling, and served with toasted coconut. THAT FAVORITE FLAVOR -- One of the nicest things about cooking outdoors is the flavor that food seems to have. The secret: Juices and fats dripping on hot coals and smoking. The smoke penetrates the food and creates that "outdoorsy" taste. For variety, soak hickory chips or small twigs from wild cherry or sugar maple overnight in water. Wrap the chips or twigs in foil, punch holes in it and place directly on the coals or briquettes. Or add the chips directly to the coals just before the food is done. For a deep smoke flavor, add the chips when cooking first begins. GO WITH GAS -- For those who favor cooking with gas, indoors and out, it's now possible to take it with you. Even when you venture away from the backyard and farther into^ the Great Outdoors, you can still enjoy the ease of cooking with gas on a portable grill operated by LP gas. THERE'S NO PLACE LIKE HOME -- Most of us love a vacation; we welcome the chance to relax from everyday routine and go places. So why not continue your vacation when you return home?
