Spanish Chicken 2 medium sized hens 6 T cooking fat 4 large onions chopped 1 large green pepper chopped 1 No. 2 can tomatoes 1 t salt 12 cloves 3 bay leaves 1 t poultry seasoning 1 t ground sage Vz t savory 1 clove garlic 2 c uncooked rice Cut up chicken, salt and pepper well. Melt cooking fat in large heavy iron cooking pan. Fry chicken until done. Add onions and pepper and fry until partly done. Add cloves, bay leaves, poultry seasoning, sage, savory and g a r l i c . C o o k 3 m i n u t e s , stirring constantly. Cover chicken with water and add tomatoes. When boiling add 2 cups uncooked rice. Cover closely and cook slowly for 30 minutes. One-time rural Americans, now that they've seen the big cities and perhaps lived there for some years, are heading back to where they came from Ex city folks, now that they've learned a bit about life down on the farm, are heading off to where they think they want to be. Our nation of villages is a world that has survived rich and wholesome despite a century of being drained of i ts population Fn 1880, most Americans lived on farms and >nly 28 2 percent This column of questions and answers on federal tax matters is provided by the local office of the U. S. Internal Revenue Service and is published as a public service to taxpayers. The column answers questions most frequently asked by taxpayers. Recently 1 obtained em­ ployment as a waitress. After working for several weeks I was approached by my employ­ er and asked to submit a re­ port of tips I received. Is a report required and if so. why? A. All tips you receive are subject to Federal income tax. Cash tips that you receive amounting to $20.00 or more in a month while working for any one employer ara subject to withholding of income tax and social security tax. You mu;;t report tips of $20.00 or more received in a month to your employer on or before the 10th day of the following month. Your report to your employer may not cover a period longer than one calen­ dar month. However, your employer may require more frequent reports to coincide with the payroll period he uses. In this case, your report may be made on the dates set by your employer. He then deducts the withholding for income and social security taxes from your regular wages. Your form W-2, Wage and Tax Statement, issued to you after the close of the year will reflect your tip in­ come and taxes withheld. You may want to use IRS Form 4070A to compile daily tip income and Form 4070 to make the report to your em­ ployer. If your employer does not have these forms, you may obtain them free at the nearest IRS office. Q. What state and local tax­ es or fees are not deductible on a Federal income tax return? A. Motor vehicle taxes, poll or capitation taxes, inheri­ tance, legacy, succession, gift, cigarette, tobacco, and alco­ holic beverage taxes are not deductible. However, personal property taxes assessed on a motor vehicle are deductible. Fees or charges such as those imposed for a driver's license, an auto inspection, dog tags, hunting or fishing li­ censes, marriage licenses, bridge or road tolls, fines, col­ lateral deposits, water bills, sewerage and other service charges, and parking meter deposits, except those incur­ red as a business expense, are not deductible. Consult the instructional materials received with your return and offered at your local IRS office for more de­ tail. Q. Consumers' Corner Use Care When Canning Constant vigilance might well be the watchword for homemak- ers as they handle, process, pre­ pare and eat food. Although certain forms of mold, yeast and bacteria can be important in some areas of food production, other forms can be quite harmful and even fatal. With canning season upon us, i t is important to be alert to the dangers of one of the worst offenders in the whole story of food processing This organism, a type of bac­ terium, produces a deadly poison and causes the disease, botulism. The organism is colorless, odor less and tasteless. The disease it causes has marked symptoms, including muscular weakness, double vis­ ion, dilated pupils, swelling of the tongue, and paralysis of the throat and eye muscles, often making it impossible for the per­ son to see or speak. Unless the disease, which is sometimes mistaken for tetanus, is diagnosed correctly within a few hours, it is fatal. Fortunately, this disease can be prevented. The organism that causes it grows in a non-acid or low acid medium and in the ab sence of air. A jar or can of low-acid food that has not been properly proc cessed is a fertile place for bac­ terial growth The organism can survive a temperature of 212 de­ grees for 8 to 10 hours. But it can easily be destroyed at a tem­ perature of 240 degrees and 10 pounds pressure in a matter of minutes, depending on the food. For this reason, it is import­ ant to use a pressure canner that has been tested and is working properly, when canning low acid foods.
