Approved Classes For Food Certification The Chicago & Illinois Restaurant association has established a state-wide Sanitation Training program to enable food service operators to comply with the new Illinois Department of Public Health rules and regulations. The training rule, which became effective Jan. 1, requires on July 1, 1978, each food service establishment then or thereafter in operation be under the operational super vision of a resident managerial person who has been certified under this rule. On April 7,- a course in troductory session will be taught at Martinetti's restaurant (6305 Northwest Highway, Crystal Lake.) Sessions at 10 a.m. and 2 p.m. will be conducted by an in structor who will also distribute the home-study textbooks. The course will use the National Institute for the Foodservice Industry (NIFI) text which is recognized in Illinois and other state cer tification programs. . Par ticipants will be tested at the final session and successful participants will be certified by the state.
