Food Tips If camp-outs are in your plans for summer, take along the fixings for an exciting wilderness dish. Campers' potato pancakes may sound like a tame, kitchen recipe, but once you get it outdoors, the flavor seems to go wild. To simplify your preparations in camp , com bine hash browns, green pepper and minced onions in a covered bowl before leaving home. You may also want to do the same with flour, salt and baking powder in a separate container. Then all you have to do is add in those all-natural eggs and oil the skillet. Capture the outdoor egg. And let the flavor in food go wild. CAMPERS* POTATO PANCAKES 8-9 pancakes or 4 servings 1 box (6 oz.) potatoes for hash browns 2 tablespoons bell pepper flakes 2 tablespoons instant minced onion 4 cups very hot water 2 tablespoons flour IV2 teaspoons salt V4 teaspoon baking powder 4 eggs, beaten vegetable oil, (approx. 1-3 cup) Cover potatoes, green pepper and onion with water; let stand 15 minutes. Drain thoroughly. Combine dry ingredients; add eggs, beating until smooth. Stir in drained potato mixture. For each pancake, pour approx. Vfc cup batter onto hot oiled griddle or skillet ; flatten with pancake turner. Cook until crisp and browned on both sides. If necessary, drain on paper towels. Serve hot.
