But that's the least we can do for a man who showed us a neater way to eat tuna fish salad. August is National Sandwich month, America's way of saluting the man who inad vertently invented an eating style that has endured-and been embellished-for more than two centuries. It was in the early 1700s that Lord Sandwich sat down (some say for a game of cards) and asked that he be brought some slices of beef between two slices of bread. The following are sandwiches recipes with a thought to those watching their weight. Cottage Cheese 'n Chopped Egg Sandwich 3/4 medium dill pickle one-third cup cottage cheese 1 hard cooked egg, chopped V/z teaspoons mayonnaise Vs teaspoon salt Dash garlic powder Freshly ground pepper to tast 2 slices enriched white bread V4 medium tomato, sliced 2 lettuce leaves (optional) Finely chop Va pickle. Cut remaining pickle into spears. Combine next six ingredients in a small bowl. Spread half the mixture on one slice of bread. Top with tomato slices and remaining cheese mixture. Cover with lettuce, if desired, and remaining slice bread. Cut sandwich in half from corner to corner. Serve with pickle spears. Makes 1 serving. "Croque Monsieur" 2 slices enriched white bread, cut horizontally to make 4 slices 2 ounces Swiss cheese, thinly sliced 4 ounces cooked chicken, thinly sliced Preheat oven to 400 degrees F. Brown one side of each slice of bread in a non-stick skillet or a skillet treated with a release agent. Place 1 slice of bread, browned side down, on each of two 12"xl2" pieces of aluminum foil. Top each neatly with a half ounce of the sliced cheese, trimmed to fit; cover each with two ounces chicken, also trimmed to fit; then remaining half ounce of cheese, trimmed, and bread, browned side up. Wrap tightly in foil. Bake for 15-20 minutes or until cheese melts and sandwich is hot. Unwrap and cut in half from corner to corner. Place each sandwich on a warmed plate. Makes 2 servings.
