Frozen vegetables are the result of extensive research, hybridization, and a highly developed technology of pre­ paration, freezing, storing and transport­ ing it to preserve maximum flavor, color, texture, and nutrients. The frozen food packers take great care to ensure quality. Special hybrids of vegetables are grown because freezing brings out their bes{. Since the freezing plants are often no more than five miles away, these vegetables can reach their peak in the fields and be frozen within a few hours after harvested. They're trimmed, washed, sorted and graded, th^ blanched--a partial cooking that stops biological systems that otherwise woi degrade color and flavor, and cause loss of nutrients. Blanching also preserves the original color and reduces the cooking odor of cole vegetables such as broccoli, cauliflower and Brussels sprouts. Freezing is swift at extremely low temperatures (impossible to duplicate in any home freezer).
