Beef Souvlakia (Makes 18 sandwiches, about 12 servings) 4 pounds beef stew meat 1/3 cup butter 1 3/4 cups water 2 1/2 cups sliced onions 1/4 cup chopped green pepper 2 crushed garlic cloves 11/3 cups (2 6-ounce cans) Contadina Tomato Paste 2 teaspoons salt 3/4 teaspoon pepper 2-3 teaspoons crushed oregano leaves 1 teaspoon crushed thvme leaves 3 3/4 teaspoon crushed rosemary leaves 3 tablespoons red wine vinegar . 18 small pita pocket breads* 1 cup (8-ounce carton) plain yogurt 1 cup (1 medium) thinly sliced onion 3-4 thinly sliced medium tomatoes 8 cups (1 medium head) shredded iceberg lettuce Cut meat into 1/2-inch pieces. Brown meat (one third at a time) in butter in large (14-inch)skillet. Remove meat as it browns. Combine 1/4 cup water, 2 1/2 cups sliced onions, green pepper and gar lic in skillet; cook 5 minutes. Add remaining 1 1/2 cups water and tomato paste. Blend thoroughly. Stir in salt, pep per, oregano, thyme, rose mary, vinegar and meat. Heat to boiling. Raw Vegetable Platter (for 12) 1/2 lb. turnips 1/4 lb. carrots 1/4 lb. celery 1 bunch radishes 3/4 lb. mushrooms 1/2 lb. cucumber 1/2 lb. cauliflower Slice all of the above and arrange attractively on a plat ter. Cherry Cream Tart (Makes 12 servings) Pastry for 10-inch pie 3/4 cup sugar 1/3 cup cornstarch 114 teaspoon salt 11/2 cups Carnation In stant Nonfat Dry ' Milk crystals plus water to make 3 cups 2 well beaten eggs 11/2 teaspoons vanilla extract 3 tablespoons butter 1/3 cup sliced almonds 2 cups (21-ounce can) cherry pie filling Roll out pastry to 13-inch circle. Fit into 11 x 1-inch metal tart pan or 10-inch pie plate. Prick with fork. Bake in hot oven (400°F.) 15 min utes. Combine sugar, corn starch and salt in medium saucepan. Mix well. Combine liquid instant milk and eggs; gradually add to saucepan. Cook over medium heat until mixture boils; stirring con stantly. Continue cooking and stirring 1 minute. Re move from heat; stir in vanilla and butter. Cool 15 minutes. Sprinkle almonds on bottom of tart shell. Pour milk mix ture over almonds. Cover with waxed paper. Chill 2 hours or until firm. NEWS I Taxpayers can receive an automatic two-month extension of their tax return filing deadline by filing a Form 4868, the Internal Revenue Service said. Form 4868, "Application for Automatic Extension of Time to File U.S. Individual Income Tax Return" is available at local IRS offices or can be obtained by filling out the handy order blank for free forms and publications found in the tax package. For requesting the extension, a taxpayer must make two copies of Form 4868, filing the original with the IRS on or before the due date of the tax return. On the original, the taxpayer must estimate his or her tax bill for the year and enclose full payment for the tax liability. When the taxpayer later files the actual tax return, the duplicate of Form 4868 must be attached and the amount of tax previously paid entered on the appropriate line of Form 1040. Taxpayers receiving an ex tension cannot use the Short Form 1040A nor can they "have the IRS compute their tax bill, the IRS said. If a taxpayer underestimated the tax bill on thp Form 4868. he or she must pay interest on the unpaid amount. In addition, if the unpaid amount is over 10 percent of the total tax bill, the IRS will levy additional penalties on the taxpayers. U.S. citizens outside the U.S. or Puerto Rico on the date of their tax deadlines can receive an automatic two-month ex tension of the filing deadline without filing Form 4868, the IRS said. This provision applies to both taxpayers whose deadline is April IS &Bd tax payers who file returns on a fiscal year basis. Taxpayers who qualify for this extension must attach a statement to their tax return when they file, stating that they were outside the U.S. or Puerto Rico on the date of their filing deadline. Extensions past the two- month extension date are granted only under unusual circumstances, according to the IRS. Taxpayers can apply for a further extension by letter or by filling out Form 2688, "Application for Extension of Time to File U.S. Individual Income Tax Return." The applicant must include the reasons the additional ex tension is necessary, the IRS said. Requests for an additional extension should be filed early so that the taxpayers will be able to file the return on time should the request for extension be rejected. If this request is denied, the taxpayer must file by the automatic extension due date or within ten days after the date the IRS denied the request.
