Community Leaders Women s Role... Filling The Easter Basket With the coming of Easter, eggs become an important commodity. Two of the questions asked most about eggs are "Why do some hard- cooked eggs have discolored yolks?" and "Is shell color important?" The answer to the first question is that when there is a greenish coating around the yolks of hard-cooked eggs, it is because the eggs hdve cooked at too high a temperature -or for too long a time-or they have not cooled rapidly, following cooking The greenish color comes from sulfur and iron com- ' pounds in the egg. These eflfh pounds form at the surface *6f the yolk when eggs are overcooked. Even though the greenish color appears, the eggs may be eaten; they are wholesome and nutritious, and the flavor is unaffected. A preferred method for hard- cooking is: Put the eggs on the range in cold water, bring water to a boil, turn off the heat and cover; allow eggs to remain in the hot water for 15 minutes, then cool them promptly in running cold water. Such eggs will be hard- cooked without having the greenish-gray covering around the yolk. Some egg shells crack druing cooking, a small hole drilled or punched through the large end of the egg shell will prevent cracking. As to whether shell color is important -some users prefer brown eggs to white or vice- versa. Actually, the only dif ference is in the shell itself. The color of the shell is determined by the breed of hen. If hens have been fed the same type of ration, the eggs will be nutritionally equivalent, regardless of shell color. They will also have the same flavor, the same keeping quality, and the same whipping and cooking characteristics. Fiesta days taring the community together For countless years in a united spirit of joy and good will. But there's a new kid on the block, and although this will be just its third year of existence. Town & Country has already taken its rightful place alongside McHenry's many other traditions. Town & Country, the summer extravaganza held over two weekends at St Patrick's church, has already become one of the social events of the year in McHenry. And when one talks about Town & Country, one has to mention in the next breath Mrs. Joan Bauer It perhaps would be unfair to say that Mrs. Bauer organizes and runs Town & Country by herself. And she wouldn't want that said. For the thing that makes Mrs. Bauer proudest about Town & Country is the massive community involvement, which last year made the festival an overwhelming success. "We had 593 volunteer workers last year," she ex plained. "People call me on the phone that I don't even know, and ask if they can help. We don't turn anyone away who wants to work." Five hundred and ninety- three volunteers. Mrs. Bauer has been getting so many phone calls from workers and prospective workers, that she installed another phone in her home. But Mrs. Bauer isr't com plaining. As one of four co- chairpersons of this year's festival, she promises it will be the biggest and best ever Persons who went last year, however, believe it will be tough to top that effort. Town & Country is sponsored by St. Patrick's church, but persons outside the church are always welcome to help. "It's a wonderful way to meet and welcome new people to McHenry. "Sometimes, when I walk down the street now, people will say, Hi Joan,' and they are people you'd never know except for something like Town & Country." The planning for such a festival is a year-around proposition. "We started planning this year's program last July right after the last one finished," she said. "We held out first meeting in November and have been working hard at it ever since." Mrs. Bauer has a definite philosophy which explains why she became involved with Town & Country. "I believe that busy people and active people are happy people," she said. And Mrs. Bauer is certainly "busy people." Besides her extensive work with Town & Country, she is also very active in the FISH pantry, which makes food items available for the needy people in the community. "Gretchen (Thomas) does a remarkable job with the FISH pantry," she said. Mrs Bauer had run a food pantry through St. Patrick's church for several years before FISH became a viable organization in McHenry. But she recognized that persons by working together can accomplish much more than person working along. So, the church food pantry joined forces with FISH, with the FISH pantry being the pleasant result. Participation in activities runs in the Bauer family. For many years, Mrs. Bauer was the' social chairman of St. Patrick's church.' Now, her daughter, Anne, is the social chairman. People throughout the community are already looking forward to this year's Town & Country. For a festival just in its third year, it has already become a tradition in McHenry. Mrs. Joan Bauer is carrying on a tradition also--the tradition of community leaders who have helped make this community such a fine place for persons to live and-or visit.
