MAR RAY DANCE STUDIO CLASSES START SEPT. 6 th PAGE 3 • PLAINDEALER - FRIDAY, AUGUST 12, It's A Peachy Summer Fresh peaches are plump and pretty and plentiful this month as they reach their production peak in California and all southern peach producing areas. The U.S. Department of Agriculture (USDA) reports a better than average peach crop of good quality. Smart shoppers take ad vantage of seasonal produce when it is in good supply and at reasonable prices. Incidental knowledge in handling peaches can be valuable at a plentiful season such as this, for you will probably buy them frequently and eat them regularly. Don't judge a peach by its blush. The red color is not always a good indicator of the ripeness. Look at the background color. It should be creamy to a very mellow yellow color. Also, look it over for well-defined creases. Fragrance can also be an in dicator of ripeness. Any green color on the peach indicates it might Jiave been picked before it was fully mature and may be difficult to ripen as a result. Unbruised but fully-ripe peaches will keep a week in the coolest part of your refrigerator, so don't restrict yourself to buying just enough for a few day's use. When selecting peaches from the store display, handle them carefully. They can be bruised fatally by squeezing or rough handling. . A helpful ruie to use when you slice peaches-2 medium peaches will yield 1 cup of sliced peaches. An easy way to peel peaches is to pour boiling water over them and let them stand about 1 minute. An-easy way to pit peaches is to run a sharp knife all the way around the peach on the crease line. Hold peach between fingers of both hands. Twist and pull apart gently. It's the slight twist that does the trick. For summertime treats, you may want to try something new with fresh peaches. One taste could make you an addict. TURKISH j PEACH CREAM 3 fresh peaches 3 egg yolks 2 egg whites (stiffly beaten) 1 pint milk 6 tablespoons honey cherry brandy nuts and cherries to decorate Halve the fresh peaches and place each in a champagne glass; sprinkle with a few drops of cherry brandy. Do not cook. Pour the cream over the peaches and decorate with almonds or cherries.
