Refreshments Of Canada Shared By Homemakers One hundred women recently listened to Edward Hornby, public affairs officer from the Canadian Consulate Generals office in Chicago. Mr. Hornby showed a film about Canada iand talked with the ladies answering their many questions. The meeting room was decorated with posters depicting Canadian life, maps of Canada and information on their space program. . Sponsored by the University of Illinois Homemakers Extension association, this program is a yearly event and features a different country each year. February of 1979 will cover the country of Kenya, Africa. After this program, Canadian refreshments were served. Sugar pie, oatcakes and maple syrup cake. The recipes are below. Sugar Pie Sugar pie is one of the traditional sweets of Canada; Quebec's most famous dessert. 2 cups brown sugar % cup all purpose flour 1 cup whipping cream 1 egg, slightly beaten 1 tablespoon butter or margarine, melted Make pastry for 9" 2-crust pie Mix sugar and flour in a 2-quart saucepan. Mix 1 cup cream and the egg in a small bowl; stir into sugar mixture. Heat the mixture over medium heat, stirring constantly just until sugar dissolves, 3- 5 minutes. Pour into a prepared 9" pie shell. Cut ten Vz inch strips; arrange in a lattice pattern over filling. Brush strips with melted butter. Bake 15 minutes at 400 degrees, then 25-30 minutes at 350 degrees or until lightly browned. May be topped with whipped cream or whipped topping. Oatcakes Oatcakes are wafers eaten with meals instead of bread. 3 cups quick rolled oats 3 cups flour 1 cup sugar 2 teaspoons salt 1 teaspoon soda \Vz cup lard > % cup cold water Combine rolled oats, flour, sugar, salt and soda. Work in the lard as if for pastry. Moisten with water. Roll thin as for piecrust; using rolled oats on rolling surface instead of flour. Cut into 2 inch squares, sprinkle lightly with sugar. Place on lightly greased cookie sheets and bake in a 350 degree oven for about 15 minutes or until browned. Maple Gingerbread Cake Vz cup butter or margarine 2 eggs \Vz cup maple syrup or maple-blended syrup 1V4 cups sour cream 3 cups flour 2 teaspoons baking soda 1 teaspoon ground ginger Vi teaspoon ground cinnamon Cream butter in large mixing bowl until light and fluffy. Beat in eggs, syrup and sour cream. Sift together the flour, soda, salt and spices; beat in to creamed mixture. Pour into a greased and floured baking pan 15"xl0". Bake in a 350 degree oven for about 30 minutes or until a wooden pick inserted in center comes out clean, nd frost with Maple frosting. Maple Frosting 3 tablespoons maple syrup 2 tablespoons butter or margarine 1 tablespoon sour cream Vz cup chopped walnuts cups powdered sugar (about) Beat syrup, butter and sour cream in a mixing bowl on low speed until creamy. Beat in powdered sugar gradually until smooth. Spread frosting on cake. Sprinkle with Vi cup chopped walnuts. These programs are, as many similar events, open to the public. Mar. 1,3,8,1978) Late Derby Notes A week after the derby, McCullom Lake was tested by the fishery biologist. It was determined there is only 4 p.p.m. of oxygen in the water. It is likely the lake is ex­ periencing some winter kill, how severe is not yet known. The heavy cover of ice and snow, lack of depth, contribute to the problem. Hopefully by next winter, there will have been enough dredging ac­ complished to prevent winter kill in the future. This condition points out the need and im­ portance of keeping the dredging program funded, and the dredge in operation. Auction A reminder, the McCullom Lake Conservation club is again co-sponsoring an auction, to be held Sunday, March 5, at tye McCullom Lake beach house on Orchard drive in McCullom Lake, starting at noon. All articles in good working order will be appreciated, and may be an outright donation or on consignment, (no clothing or mattresses please, state law). Articles may be brought to the beach house Sunday morning, March 5, pickup service for large items or loads can be arranged for on Friday and Saturday, March 3 and 4, by calling 385-8910. For persons wishing to help and support the dredging program on McCullom Lake, please be generous with donations, and attend and support these projects. All sale funds goib the dredge fund. As soon as the ice is gone from the lake the dredge program will again be under way, by sup­ porting these various projects help to insure funding is a must. A Repeat Shop and Share days at a local food store are coming up, Tuesday and Wednesday, March 21 and 22. (Just before Easter) The Conservation club was so pleased with the results and cooperation of Shop and Share days held in November, under the able supervision of Mrs. Charles (Joyce) Larson, that Joyce advises we will try again. More details and information next week. In the meantime all of you shoppers out there and start getting friends and neigh­ bors interested and aware of March 21-22. All monies will again go to the dredge fund for McCullom Lake. A Problem A problem, that is always difficult to solve again seems to be out of hand-dogs. It has been noted, too many dogs are being allowed to run loose, or being walked on McCullom Lake. Some of these dogs also go ashore and overrun private property. Dogs are not per­ mitted to be on McCullom Lake at any time, or on the beaches. Please confine your pets to your own property. Cookbook Good news: The McCullom Lake Conservation club cook­ books have arrived. For all you gals who donated recipes, and ordered books, you may con­ tact Mrs. Ed. (Harriet) Hammer, your cookbook is waiting for you. The cookbooks are worth the long wait, the dredged-up recipes sojjnd delicious, there is even a chuckle or two included. If a book was not ordered they may be purchased now while sup­ plies last, by contacting Harriett. To Mrs. Harriet Hammer, and Mrs. Joyce Larson, for a lot of time and effort spent getting this project under way and completed, the club appreciates their effort. A job well done. Most of the meeting being devoted to discussion of the city of McHenry's purchase of a beach on McCullom Lake. The date has not yet been chosen, but should be within the next month. Then there was a discussion on Share-The-Fun Susan Schiller, Chris Price, and Lynelle Limbaugh were chosen as co-chairmen. The first meeting was held Feb. 21. Also discussed was the possibility of having a foreign exchange student visit our club and talk about his country and customs. After the business meeting talks were given by Lynelle Limbaugh, Valerie Withington, and Sandy Gieselman. Demonstrations were given by Neil Wright and Marge Gieselman. At 8:30 the meeting was adjourned and refreshments were served by Mrs. Withington.
