We know that all veg etables should be washed thoroughly before they are cooked, but remember that they should be washed rapidly rather than allowing them to soak in water Leafy vegetables are best washed if placed in a pan of coio water, then lifted out. As many waters as necessary are used to free the vegetables from grit and sand Use a small brusn in cleaning other than leafy vegetables We cook vegetables as rapidly as possible Cabbage, cauliflower, and onions require a quanitiy of water when cooKed whole, but mosi^are best cooked m very little water Leafy green vegetables, such as spinach, are an exception. They are cooked in just the water that clings to them and kept covered until they have wilted. An enemy of food value is the spoon, so don't sbr vegetables while they are cooking. Boil vegetables until they are just tender, so that some of the crispness is retained Add one to two teaspoons salt to each quart of water, bring the water to a boil and add the vegetables slowly so the water does not stop boiling Editor's Quote Book You have to stop in order to change di rection Erich Fromm r r 7 ?r T »7 USTIC ARBOR Restaurant and Lounge SERVING: BREAKFAST, LUNCH & DINNER DAILY LUNCHEON & DINNER SPECIALS FRIDAY FISH FRY - SUNDAY BRUNCH R THE HARBOR LOUNGE FEATURtS DOUBLE BUBBLE HOUR MON.-FII. 4:00 P.M. to 7:00 P.M.
