This classic Euro­ pean entree is a meal-in-a-pot, says the National Live Stock and Meat Board. It calls for the choncroute (or sauerkraut) to be cooked with potatoes and onions in white wine. La­ ter, apple wedges are added along with a triple sausage treat of frankfurters, bratwurst and smoked pork sausage links. Sausage Choucroute 6 frankfurters 6 fresh bratwurst links 6 small smoked pork sau­ sage links 1 can (27 ounces) sauer­ kraut 2 cups chopped onions 6 medium-sized red pota­ toes, pared and halved 1 Zi cups white wine 2 medium-sized tart red apples, cut in wedges Drain sauerkraut and com­ bine with onion and potatoes in Dutch oven or large pot. Add wine, cover and cook in moderate oven (350° F.) for 1 hour. Place apple wedges on top of kraut. Arrange frank­ furters, bratwurst ana smoked sausage links on top. American toads trill, loons begin raising a family, and in August the wolves and moose of Isle Royale are ob­ served. In the fail the family of loons is revisited. In winter Tom tracks by snowshoe the fisher, a rarely seen member of the weasel family. The returning warmth of, spring brings again the distant drumming of the ruffed grouse, completing the cycle.
