(Don't praise the bread until it is baked). One of the great traditions of Irish cooking is the excellence of home-made bread. Soda bread is baked daily in every farmhou.se and is considered to be among the best kinds of bread. 1 ounce butter or margarine 1 pound flour 1 teaspoon salt 1/3 pint buttermilk or sweet milk 1 heaped teaspoon baking soda Rub the butter into the flour. Add the salt and soda, mix all well together by running the dry ingredients through your fingers. Add the buttermilk (or sweet milk) and stir into a soft dough. With your floured hands knead lightly into a ball and turn out to a lightly floured baking sheet. Flatten the dough into a circle 1 1/2 inch thick with the palm of your hand. Make a cross ih the center with a floured knife. Bake at 425 degrees for 30 to 35 minutes.
