BEN BAUER Residents of the McHenry area all of their lives, the Bauero' farm house is still standing at the corner of Fairway drive and Green street. "That house was just too big," Bauer said. The Bauers have recently moved a couple of blocks down the street into a smaller hoiise, but one that stands on what used to be the Bauer farm. Mrs. Bauer reminisced about school dayi. "There were no school1 buses when we were children and I remember riding to school on the milk wagon," she said. "Then the milk wagon would go west and we'd have to go north." V - J A dairy farmer all his life, Bauer thought back to the days when he was married. "When we were married, there were only a few houses from East campus south." The McHenry Plaindealer has been in the Bauer family for as long as either can remember and he takes particular pleasure in reading the paper from front to back. Too many problems loom up t' test th' most intelligent mind, ina tryin't' unravel th' web we've woven, due t' lack o' fore-sight, an' now we're all caught up in it. When one considers th' thousands, hundreds o' thousands, an' on into billions o' dollars spent on non-essentials, one wonders where th' money comes from. But, take into con sideration that, that dollar bill ye spend so readily, has been cut into such minimal pieces, it ainH worth much any more. We hear that th' spendin' f'r holiday festivities is surpassin' any o' th' past, an' it gives this ol' lady th' ' videa that folks feel they may as well get th' most o' it, while th' gettin's good. One can't put it away in th' ol' sock, anymore, f'r fear o' losin' it by theft 'r somethin' else. Where, oh where will it all end. Wi' people more in- t'rested in th' material things in life, to which they've b'come so ac customed that they b'gin t' feel that they're essential, one wonders what th' next Christmas season '11 bring. Prayers an' hopes f'r a satisfactory settlement o' problems, o'er seas, fill th' heart o' us, all an' a hope that Christmas Day may be a reunion f'r those op pressed, who serve our country. Holiday Food Safety Tips- Entertaining a large family gathering is fun, but it needs to be done safely too, says Kathi Heberer, mcHem;y County Extension Home Economist. Roast turkey, the all-American favorite Thanksgiving entree, is a perishable food. Always thaw a frozen turkey in the refrigerator. If you must thaw it more quickly, put it in a water proof plastic bag, seal tightly, and defrost in cold water. Thawing frozen poultry at room temperature is extremely dangerous, warns Heberer. Thawing at room temperature gives bacteria a chance to grow. This is especially true with large frozen turkeys because of the long time it takes them to thaw^ompletely. Commercially frozen stuffed poultry should not be thawed before baking. Put the poultry directly into the oven. Cook turkey thoroughly, to an internal temperature of 180-190 degrees F. Never partially cook it and finish cooking later. Bacteria can survive in partially cooked poultry. Stuffing inside a warm turkey is a breeding place for bacteria, it is recom mended that stuffing be cooked separately from the turkey. If you must cook stuffing inside the turkey; cook it until the meat thermometer inserted into the stuffing reaches 165 degrees F. Never stuff a turkey the night before cooking, says Heberer. Turkey dinner leftovers should be refrigerated immediately. Cool leftover meat dishes quickly (con tainer may be placed in cold water), cover, and refrigerate. Use within 3 to 4 days. Stuffing should be removed from poultry and stored separately. Use these leftovers within 1 or 2 days. Scalloped oysters, another holiday favorite, is also highly perishable. Keep them refrigerated or frozen until just before cooking. In serving, keep them HOT (above 140 degrees F). Serve quickly and refrigerate leftovers immediately. On holidays when large groups gather and more food is present storage may be a problem, adds Heberer. Perishable food such as cream pies, seafoods, and dishes made with eggs, fish, meat and poultry must be kept COLD (below 40 degrees F). Do not let these foods stand at room tem perature more than 2 hours. Holiday meals are fun but need careful planning. Don't try to feed more people than you can handle. Consider the size and quantity of the cooking equipment you have, your supply of eating utensils and dishes. Also consider how much the refrigerator will hold. By serving it safely you are sure to have a holiday meal everyone will enjoy concludes Heberer. Literature and music were the most important subjectr taught in ancient Greek schools. Seniors Have Food Boxes The McHenry County Senior Citizen's Council, through the Meet and Eat program, announce that Sunshine Supplies, an emergency food program, available to senior citizens in the county will be available again this year. The Sunshine Supplies boxes, containing three meals per day for three days for one person, are available at senior Walk-In centers throughout the county. The nutrition program is not based on a charge system, however, donations of the retail cost of the contents, enable more seniors to participate. The boxes provide emergency meals for snow bound seniors during the winter months. Last year the council's Meet and Eat program distributed 500 boxes of supplies; this year 1,000 boxes are being prepared. The nutrition program relies on the Meet and Eat program and the generous efforts of volunteers who help package and deliver boxes to home-bound seniors. The Sunshine Supplies are c a r e f u l l y p l a n n e d , nutritiously selected, and contain food to meet the RDA for seniors. Linn Olesen, director of the Nutrition project for the council, states the supplies will, "lift the spirits with a little bit of sunshine on a gloomy day."
