VALENTINE'S DAY DESSERT Show how much you care by serving Kiss of Persuasion Desserts as a fabulous finale to any Valentine's Day dinner. A rich, chocolate-almond mousse layered with bananas and almonds makes deliciously pretty parfaits . . . and thanks to unflavored gelatine, they can be prepared in less than one hour leaving olentv of time for romance. KISS OF PERSUASION DESSERTS 2 envelopes Unflavored Gelatine 2 cups (lpt.) whipping or heavy cream 1 cup milk, heated to boiling 1/2 cup sugar 1/2 cup setiii-sweet chocolate chips 1/2 teaspoon almond extract 1 cup ice cubes (about 6 to 8) 2 bananas, sliced 1/4 cup chopped almonds In 5-cup blender, sprinkle unflavored gelatine over 1 cup cream; let stand 3 to 4 minutes. Add hot milk and process at low speed until gelatine is completely dissolved, about 2 minutes. Add sugar, chocolate, almond extract and remaining cream; process at high speed until blended. Add ice cubes, one at a time; process at high speed until ice is melted. Let stand until mixture is slightly thickened, about 8 minutes. In parfait glasses or dessert dishes, alternately layer gelatine mixture with bananas and almonds; chill until set. Garnish, if desired, with additional whipped cream and chocolate kisses. Makes 6 servings. From The Desk Of Illinois State Council On Nutrition by Virginia Hill PROTEIN A KEY NUTRIENT Protein is a key nutrient for nutritional health. Along with fats, carbohydrates, vitamins, minerals and water, protein is important for good health and well- being. When protein breaks down in the human body, it is the amino * acids, or the break-down products or "building blocks" that the body uses for the main­ tenance and repair of tissues. The body needs certain amino acids in particular proportions from food sources. These are called the essential amino acids, of which there are eight: isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan and valine. Protein comes from two sources, animal and plant. Animal proteins, such as meats, fish, poultry, eggs and cheese, contain all eight essential amino acids in the proper proportions. So they are referred to as complete proteins. Plant proteins, such as legumes, grains, nuts and seeds are missing one or more of the essential amino acids or have one or more in short supply. Plant protein is call incomplete. And. when one amino acid in a plant source of protein is in short supply, all the others become short to the same degree. So one amino acid limits all the others and is known as the limiting amino acid. In order for plant protein to become complete, it must be mixed with another plant protein that is limiting in a different amino acid. This mixing is called com­ plementing. Combining two proteins that complement each other in the same meal results in a complete protein. In general, legumes like dried beahs, peas and lentils are limited in methionine, but they are high in lysine. Grains like wheat, corn, rice, oats, rye and barley are limited in lysine. So mixing the two classes of plant proteins, such as legumes and grains, in the same meal gives the body complete protein. Many familiar foods are com­ plementary protein foods, such as peanut butter and crackers, beans and rice, or tortillas and refried beans. Another way of com­ plementing plant protein is by combining the legumes, grains, or seeds with a Small amount of animal protein. In this way, you get all the benefits of the plant protein as well as the animal protein. This is the basis for such foods as macaroni and cheese, tuna and noodle casserole, cereal and milk, 6r beans and franks. With the cost of meat going up, it might not be a bad idea to think of getting our protein in other, less ex­ pensive combinations.
