Paying $15 to $25 for a piece of meat that your family will enjoy and get 12 to 16 servings from is not ex­ travagant. When selecting a cut from the chuck, look carefully at the different types of blade bones. The nearly flat one identifies the blade cut near the rib, the more tender part of the animal. Good buys are also found on fryers and turkeys. And pork prices are holding their own. But some stores do fea­ ture sausage and cuts from the shoulder. Brush fillets with butter. Broil 8 to 10 minutes, until lightly brown­ ed or until fish flakes easily with a fork. Combine cheese, chili sauce, mustard and horseradish; spread cheese mixture on fish.
