Green Tomato Relish 1 peck green tomatoes 6 green peppers 6 sweet red peppers 7 large carrots (cook separately) 10 onions 3 stalks celery 2 T mixed pickling spice (tie in cloth bag) 5 c vinegar S c sugar * Cut or grind all vege­ tables except carrots and soak in salt water brine over­ night (brine: % cup salt to 1 quart water)! The following morning drain or squeeze out brine, add carrots which have been chopped or coarsely ground when raw, then cooked. Mix vinegar, sugar and spices to gether. bring to a boil.
