With encouragement from Alvina and my friend Sib Whiting, I entered the license facility with great confidence. Must say some applicants sitting around the room and waiting seemed nervous as a kitten. The test isn't too tough if you study, the little booklet named Rules Of The Road. Better still, study courses for Senior Citizens are said to be most helpful. As they called numbers for ap­ plicants to step forth and run through the wringer, we noticed they put through over 100 before noon. If the Secretary of State happened to ask me, I would advise hiring more people to take us out for road tests. It would spare your other end from long sitting on hard chairs, speed up the procedure and help the unem­ ployment situation. Not so where I grew up downstate, near Galesburg, 111. The true (and onto) pie pumpkin^is diffe pumpkin Color- dark tan-when ripe. (Sligh1 green veining.) Shape-flattened- not round-from 10- 15 to 25 inches in diameter, and sometimes weighing over 50 lbs. The texture of these pie pumpkins and also the taste is far superior to the Jack O' Lantern type. They are less stringy and much sweeter, -not strong and sometimes a little bitter in these orange pumpkins. I'll admit that you can make a pie out of the ordinary variety, but it is not nearly as tasty as one made from the true pie pumpkin. Where we lived we called the orange variety Cow Pumpkins and fed them to our cattle. I have seen steers walk away from a feed tank full of ear corn and go to one full of chopped up cow pumpkins. (Dessert). Some variety of squash make good pies. I believe the butternut is one. Rating pies from one to ten -1 would rate them as follows: Halloween type - 4 (?) Squash - ft Pie pumpkin -10 But even richer is a pie made from sweet potatoes. This kind of pie is very popular all thru the South, second only to Pecan Pie. Libby Company cans almost pumpkin, enough in one can sells forr about 79 cents. Their pkin pie mix requires only dition of milk and eggs (about $1.00). Seasoning is in the mix. Traveling thru a town not far from Springfield, I just happened to be there when they were celebrating "Pumpkin Week". A parade - bands - floats and a Queen. They were also selling individual pies and cider at stands on their Main Street. Libby has a canning factory there - signs up farmers to plant acreage and furnishes the seeds. When harvested, they are bought by the ton. Pies on sale in stores and bakeries, I am sure use only pie pumpkins. Heinemans Bakeries used to make a superior pumpkin pie, but since they were taken over by a large cor­ poration, they are not quite as good. Mrs. Smith's pies are best. Sara Lee and Pet Ritz about tie for second. Harriss - number 3 and if Banquet does make one - I do not buy. In another column you say you do not see why anyone can call a cow "Holstine" instead of "Holsteen". Everyone in Indiana says "Holstine". What do you call the tankard from which you drink beer? I believe this breed of cows originally from Europe in a province called Holstein along the Baltic Sea I wonder how the word is pronounced there?
