If you 're the lucky owner of a new microwave oven, that's certainly "one good thing." Microwave cooking is fast, ef­ ficient and remarkably easy. Another "good thing" is glass and glass-ceramic cookware. The fact that most Ameri­ can kitchens are already well stocked with this type of cookware is a plus for new mi­ crowave oven owners. They'll most likely need only a few special accessory items, thanks to the versatility of the glass and glass-ceramic ware they already own. Both materials perform well in microwave, conventional or convection ovens. The glass- ceramic pieces have the added ability to go on top of the range or under the broiler. And, all will go from refrigerator to oven to table, a procedure even more likely to be followed by microwave oven owners. More efficient cooking Microwaves pass easily through glass or glass-ceramic ware and into the foods they contain, which means more efficient cooking. And foods stay hot for serving with glass and glass-ceramic cookware. Both materials retain heat much longer than metal, mak­ ing them ideal cook-and-serve ware. Still, there are some items specifically designed to help cooks get the most from this modern cooking method. These include meat racks and casserole dishes with built-in racks, specially designed glass ring molds and round cooking dishes, and the most popular of all microwave accessories, browning dishes and skillets. Browners help cooks get that "skiliet-fried" look from their microwave ovens. They have special coatings that get hot when die dishes are pre­ heated in the microwave oven for a few minutes. This en­ ables the browners to sear meats and grill sandwiches or other foods to give them that attractive browned-on-a- griddle look that people like. Racks are used in micro­ wave ovens to elevate foods such as bacon or pork above their drippings for better mi­ crowave cooking. Ring molds -- and other round dishes -- provide the best shape for uni­ form, even microwave cook­ ing. Glass ring molds are es­ pecially suited for microwaved meat loaf or casseroles be­ cause they provide ideal mi­ crowave energy penetration of the food. So, if you've added a mi­ crowave oven to your kitchen, be a smart consumer. Before you rush off to buy a lot of new cookware, start with an inven­ tory of your cupboard. See what you already have that will do the job. If you're not sure a dish or bowl can be used in the mi­ crowave oven, make this sim­ ple test. Fill a Pyrex measure -- or any Pyrex bowl -- with a cup of water and place it in the microwave oven along with the dish to be tested. Microwave at high for one minute. If the water becomes warm while the dish remains comfortable to the touch, the dish is mi­ crowave-safe. If, however, the dish has become warm, it has absorbed microwave energy and therefore shouldn't be used in the oven. Once you've made your cookware inventory, you'll be better prepared to buy only those new pieces you really need or want.
