If you're one of them, you're sure to en joy the following recipes for Cinnamon Stars and Fruit Cake Cookies, both ab stracted from Cookies and Candies for Christmas (Irena Chalmers Cookbooks) by Michele Urvater. CINNAMON STARS Makes 2 dozen Preheat oven to ̂ 375 degrees VX cup butter 10 tablespoons sugar Grated rind of 1 lemon 1 egg IVa cups flour 1 teaspoon cinnamon Pinch of salt 1 VI cups ground blanched almonds Vi cup seedless raspberry Jelly 1 cup confectioners' sugar 2 tablespoons white rum Prepare 2 cookie sheets. i * Beat the butter, sugar and " lemon rind until light and creamy, then beat in the egg. Blend the flour, cinna mon, salt and almonds and stir into the butter mixture. Roll the dough between 2 pieces of wax paper until lA inch thick. Transfer the dough, still lodged between paper, to a baking sheet and chill for an hour or more. Peel off the top piece of wax paper. Dip a 1 Vi inch star- shaped cookie cutter in flour and stamp out cookies. Re move any paper which sticks t<u the bottom and transfer the cookies, with a spatula, to prepared sheets. Gather any scraps of dough into a ball, roll again be tween wax paper and chill until firm enough to cut more cookies. Bake the cookies for 12 to 15 minutes, or until lightly golden. Cool on a rack and when they are completely cool dab Vi teaspoon jelly on half of the cookies and cover with the remaining cookies, to make sand wiches. Combine the con fectioners' sugar with the rum and spread some on top of each sandwich. When the glaze has dried, store the cookies in airtight contain ers. FRUIT CAKE COOKIES Makes 48 pieces Preheat oven to 300 degrees 2 cups chopped dried apricots 2 cups chopped pitted dates 12 chopped pitted prunes Vi cup yellow raisins 1 cup currants 2 cups chopped walnuts 2 cups chopped pecans % cup flour Vi teaspoon baking powder Vx teaspoon salt 3 eggs Vi cup brown sugar j Va cup sugar 1 teaspoon vanilla VX cup dark rum Butter a 15-by-17Vi-inch jellyroll pan. Line the pan «| with buttered brown paper or baking parchment. Combine the fruit and nuts in a big bowl. Sift the,*. * flour, baking powder ana salt together and then add to fruit and nuts. Beat the eggs, the two sugars and va nilla together and add to the fruit, nuts and flour. Com bine all the ingredients thor oughly and pat the mixture into the jelly-roll pan. Bake for 35 minutes. Cool for 30 minutes, douse with rum and cut into 48 pieces.
