Did an^\of the stored canned goods (home or commercial) freeze? How about that extra refrigerator in the garage, did the food in there freeze? In case of a recurrence of that type of situation, here are some tips from Nancy Moore, Senior Extension Adviser, Home Economics, McHenry County Extension office. When foods freeze, the water they contain expands. Cans and jars may crack or explode. Eggs may have cracked shells. Root vegetables, such as potatoes, have their ceil structure - destroyed so when they start to thaw, they turn to mush. There may be color, texture and flavor changes due to accidental freezing. Some of the accidentally frozen foods may be salvaged. Just because they have frozen doesn't mean they automatically need to be thrown out. • If the food products that were frozen included onions, carrots or potatoes, don't let them thaw! Cook them immediately as part of the day's meal or cook them and then refreeze them in the freezer. When cooking foods and refreezing them, don't cook them completely, cook until fork tender, then freeze as quickly as possible. Remember, the quality of accidentally frozen and then processed food will not be top quality.- Frozen fruits such as grapefruit, oranges or apples need to be juiced and refrozen immediately. Apples should be cooked and refrozen. Do not let them completely thaw or all ^ they will be is mush. Eggs present a problem because many times the shell V,cracks. Cracked eggs should not be eaten as a precaution against food poisoning. Some eggs do not crack when frozen and can be put directly into the freezer for future use\>r used as soon as they thaw enough to handle. Frozen eggs as a rule do not beat fluffy so the best use for frozen eggs is in recipes, scrambled, or custards. Cans of commercially processed food can be thawed and eaten if the can has not been damaged to the point where^the food product has been exposed. Home canned goods when frozen can be handled in the same way. If the seal is intact and th^ jar is not cracked, it can still belused as a food product. Commercially or home canned tood that has been frozen and thawed but is still intact should be ^marked in some manner So thafbefore it is used it can be checked for the classic spoilage symptoms, including off color, texture, flavor and Social odor. One should take into consideration the fact that accidentally frozen foods will haveiess than quality texture and color in judging for spoilage so odor or mold become the most important spoilage symptoms to watch for. "If in doubt, throw out." «r Modern homes do not have many if any ideal locations for storage of food. When storing canned goods, root vegetables, fruits and squashes, consider temperature, light and moisture.
