The key to successful nutrition education was the topic of Joan Heppes' talk. She's the nutritional educational director for the DNA, an industry-wide educational and promotion group funded by many segments of agriculture, including far­ mers. Elaborating on her annual meeting talk Ms. Heppes* said consumer food habits have changed significantly from several decades ago. .. "Today the average American) eats twice as much protein as he / needs, and deficiency of major vitamins and minerals is not widespread," she began. "Because of society's over­ indulgence in fat and protein- rich foods, 30 percent of the U.S., citizens are overweight. Today's nutritional education efforts are aimed at a much more weight-conscious society. t "We are trying to teach them not to eliminate nutritious foods from their diets in order to lose weight." » The key to successful education about dairy nutrition is to provide accurate knowledge about the product, she continued. "In evaluating nutrition education, we are not only looking to see if the public's knowledge improves, but we are looking to see if behavior changes," she explained. "The dairy industry has a nutritious product, and this product belongs in the selection of intelligent food choices. It is the job of the Dairy Nutrition Council to inform consumers of the 'calcium connection' and the health relationship between calcium, health and dairy foods. "We must convince people that calcium is essential for people of all ages. Our dietary analyses at high schools in­ dicates over half the high school girls do not have enough calcium in their diet." The biggest job for the dairy industry in the years ahead, she summarized, is to "sell the American public on the necessity for dairy products. Nutrition «e<lucation for the eighties is to help people adopt healthy dietary practices and make intelligent food choices. "Nutrition education can * make a difference in food selection and increased con­ sumption of healthful foods." August 11 prairie walk to focus on Moraine Hills On Saturday, August 11, Bill Wingate, well-known naturalist, will lead the fourth in a series of seven nature walks featuring Pike Marsh in Moraine Hills State Park. The walk, sponsored by McHenry County Defenders, will begin at 2 p.m. in the first animal life parking area inside the park. Both the identification and ecology of the wet prairie will be interpreted along the board walk trail through Pike Marsh. Wingate also will give in­ troductions to a wide variety of Moraine Hills State park contains 1,676 acres of public land with 11 miles of bike paths and numerous picnic areas. The park is located about three miles south of McHenry on River Road. From McHenry, take Route 120 east and go south on River Road.
