There's nothing quite so telling as pulling on last year's swimsuit at the beginning of a new summer season. The new American cuisine, with its em­ phasis on fresh ingredients, light and delicate preparations and smaller por­ tions, has surely helped Americans to trim pounds. But even as increasing numbers of adults have successfully modified their diets to avoid excessive cholesterol, car­ bohydrates and calorie-loaded entrees, the resolve of the strongest seems to end at the pastry cart. Millions of Americans continue to throw calories to the wind when selecting a dessert. For many, an elegant dessert acts as reward for having selected a lean entree -- a celebration of one of life's small triumphs -- or as consolation after a tough day at work or at home. A nationally recognized chef and food consultant with special expertise in desserts, Richard Sax, suggests that a new light breed of dessert, consistent with the new American cuisine, will take the dessert cart by storm this summer. "This summer, you'll be seeing desserts that are luscious and refreshing, but also lighter than ever," suggests Sax, author of the best-selling cookbooks, New York's Master Chefs and Old-Fashioneo Desserts. "The good news for dessert lovers is that the question needn't be whether to indulge in a mouth-watering dessert, but which of the newest fashionable and fun desserts to try first," says Sax. The new American desserts emphasize fresh ingredients, simple preparations, and a light, refreshing taste, that, while satisfying, is not overly sweet. While there will always be an audience for rich, gooey chocolate and butter- cream concoctions, here's what expert Richard Sax predicts will sweep the na­ tion this summer. "Fresh fruit, especially, berries and tropical fruits such as kiwi, will be popular. Served simply doused with a li­ queur, or in wondefully light tarts, fresh fruit dessert preparations will be at the top of this summer's dessert list." And frozen desserts are at an all-time high in popularity. Competing for the top spot will be a vast assortment of ice creams, sorbets, and an increasingly popular line of healthy frozen desserts dispensed from "softserve' machines such as Colombo Frozen Yogurt, and frozen non-dairy desserts^uch as Tofree. "Frozen yogurt and products like Tofree represent the best of both worlds for dessert lovers, because the smooth, creamy texture of flavors such as chocolate and peanut butter provide delightful flavor with only 130 calories per serving," says Sax. "Calorie for calorie, the taste of these healthy frozen desserts is hard to beat. Together with fresh fruit, granola and crunchy nuts, or with a rich and gooey topping, you have a cool and luscious break from the summer heat."
