Sprinkle both sides with salt. Place quarters, skin side up, on rack in roasting pan. Bake in slow oven (350 degrees F.) until meat is tender, 2% to 3 hours. Turn several times ending with skin side up. Prepare pilaf. Cook rice as directed on package label, adding the bouillon cube to the water. Cook celery, mushrooms, and green onion in butter until mushrooms and onions are tender, but not brown. Stir in hot cooked rice. Optional: Combine cherry filling and water; heat. Serve duckling quarters on pilaf with cherry sauce. Makes 4 servings.
