Look no further than the blueberry. Summertime is the best time to fully enjoy the blueberry's distinct flavor because it's in peak season. It's a convenient "wash-and-ready" fruit - no peeling, seeding or chopping required and its subtle, sweet flavor is ideal for a variety of summer desserts. Even better is that the blueberry is good for you, too: It has been thought to help prevent certain cancers, lower blood pressure and diminish cholesterol. Here's a recipe that's sure to make blueberries a welcome addition to your dessert menu this summer. Prepared just before serving, this tart makes a great impression. It can be made with other fruits as well - pears or apples work nicely - but it is particularly delicious with berries. For an extra-special treat, top each tart with a small scoop of rich vanilla ice cream, but the tart is wonderful all on its own. Last minute blueberry-raspberry tart - Serves 8 1 stick (8 tablespoons) unsalted butter, chilled and cut into bits, plus some for greasing the baking sheet 1 17-ounce package frozen puff pastry, defrosted for 30 minutes 3/4 cup sugar, divided 4 cups fresh blueberries A TASTE OF A light and healthy summer treat 1 cup fresh raspberries Preheat the oven to 400 F. Lightly grease a baking sheet. Spread the two pastry sheets flat, cut each into quarters, then transfer to baking sheet. Turn up the edges of each piece 1/2 inch all around to form a border. Sprinkle the bottom of each piece with 1 teaspoon of sugar. In a large bowl, combine blueberries, raspberries, and 1/3 cup of sugar and toss gently to coat the berries. Spoon the berry mixture equally over each pastry shell. Scatter 1 tablespoon of butter over each tart, then sprinkle remaining sugar equally over the eight tarts. Bake in the center of the oven for 17 to 30 minutes, until pastry is golden brown and fruit is softened and bubbly. Serve immediately.
