Cook for 5 minutes until the anchovies dissolve and the tomatoes collapse. Season to taste. Heat the remaining olive oil in a skillet and fry the bread crumbs until golden and crisp. When the dough has risen, uncover and dimple the top lightly with your fingers as if you were making focaccia, but don't make too many holes. Spread with half of the sauce and bake for 25 minutes. Remove from the oven, spread the remaining sauce over the top, scatter over the bread crumbs and extra oregano, and drizzle with olive oil. Finish by scattering the caciocavallo over everything, then bake for another 5 minutes until the top is golden.
