Owners Kerry Campbell, Stephane Sauve and Paul Asaris have put together the well-known and loved popular appetizers, entrees and desserts that are a collage of culinary history. Savour the memory of Crostini, an appetizer that first made its Paradiso premier in the summer of 1993. Those grilled focaccia points under a blanket of sundried tomato and roasted pepper pesto cream were so much in demand by diners they were a menu staple right through to the winter of 2005. It's the same story with the pasta roulade of ricotta cheese, smoked chicken, Portobello mushrooms, roasted tomatoes and asparagus in fresh rolled pasta. Remember the lobster risotto, its saffron, sweet peas and parmesan cheese that were the hit of the Juno Party hosted by Paradiso in 1994 and again for the-New Years Eve soiree of 1995? It's one of 11 treats that have made their way back on the 15th anniversary menu. The all too short run of garlic seared shrimp with sundried tomato-mascarpone risotto, black bean sauce and Mediterranean salsa featured between winter 2003 and spring 2005 is also back. A cast of gastronomic stars such as balsamic-rosemary grilled veal chop, coconut grilled Atlantic salmon filet, oven roasted lamb chops, peppered chicken livers, Navy St. pie and lemon custard tart, also make cameo appearances. With such a tasteful past, Paradiso's future promises to be equally exquisite.
