Antonio DAnello, corporate chef and director of food and beverage for the restaurant, has been working to create one of the freshest and most delicious menus. Featuring ingredi- ents from sources located as locally as possible, without sacrificing quality, Compass Lakeside Grill and Lounges menu boasts the freshest meats, fish, fruits and vegetables. Our menu is based on the FOSL Philosophy, which stands for Fresh, Organic, Sustainable and Local, says DAnello. Its all about eating what is around you. We have so many great resources available to us, which can be hard in Canada, but its always possi- ble. Our menu features 80 to 90 per cent local ingredients in the summer months and about 70 to 80 in the win- ter. The restaurants grill items come only from sources that are in line with their FOSL Philosophy; their Provimi Veal Parmesan dish features veal from Cambridge, Ontario, the Beef Tenderloin comes from Mitchell, Ontario and all of their cheeses are from local Artisans. Our grill items are organic, non- genetically modified and contain no preservatives, says DAnello. We deal only with purveyors who make a con- scious effort to maintain sustainable practices while providing the highest quality product.
