It is made ahead of time and baked when needed, filling the house with a wonderful aroma. Ingredients: · Eight eggs · Three cups of low fat milk · One tablespoon of Dijon mustard · One teaspoon of salt · Two cups of shredded cheddar cheese · One cup of fully cooked ham, bite sized pieces -- you can use your leftover turkey as a substitute for the ham · Three cups of fresh baby spinach · Two cups of sliced fresh mushrooms (optional) · Ten cups of cubed bread · Nonstick cooking spray Directions: · In a large bowl, beat eggs -- then add the milk, mustard, basil and salt · Gently stir in remaining ingredients until well mixed · Spray a 13-inch by 9-inch baking dish with nonstick cooking spray · Pour ingredients into the greased baking dish · Cover and refrigerate eight hours or overnight · Remove from the refrigerator 30 minutes before baking · Bake, covered for 30 minutes, at 350 F for one hour or until a knife inserted near the center comes out clean · Let stand for 10 minutes before cutting Servings: 10-12 -- Submitted by Julia Hanna, founder of HealthyFam New funding backs Action Plan for Seniors Oakville MPP Kevin Flynn recently announced the Province's plan to offer more support for seniors through a new community grant program. "We value the important contribution seniors make to Oakville. Through these grants seniors-focused organizations can help seniors stay connected and engaged with their community," Flynn said in a news release. The program -- the first of its kind in Ontario dedicated solely to supporting seniors -- will provide funding to not-forprofit community groups for projects that encourage greater social inclusion, volunteerism and community engagement for seniors. The new program is part of the Province of Ontario's Action Plan for Seniors. Grants will range from $500 to $10,000 and help support initiatives allowing seniors to continue to contribute to all aspects of community life. By 2016, for the first time, people over the age of 65 will account for a larger share of the population than infants and children aged one to 14, stated the release.
