Sam . w ho has over 18 years in the food and b ever age industry, decided to open the restaurant after a recent trip to T rinidad ith her family. T here, she found countless people enjoying food that could be prepared at th eir ow n hom e - and people w ere paying for it! "L iving in T rinidad w hen I w as younger, my m om was alw ays cooking som ething. Eventually. I was able to taste som ething and go hom e and be able to m ake it m yself." she says. "D uring our trip, we saw lines o f people w aiting for dishes that I have been preparing at hom e for years. The idea was that you could take an y thing there and sell it." T hat idea, o f preparing any native dish and selling it to custom ers, has becom e the backbone o f Scotch B onnet's eclectic and flexible m enu. Not only do they have a regular m enu, but with 24 hours notice, Sam . along with mom Sheila, is able to prepare specific m eals according to a cu sto m er's request. "If people have had a C aribbean dish - I can m ake it. We ask for a d ay 's notice so that everything is fresh." she says, adding. "A lot o f the recipes we use are n 't even w ritten dow n - th e y 're all from m em ory." To ensure every thing on the m enu is o f the highest quality and freshness. Sam d o esn 't keep anything in the freezer, but orders on an as needed basis. T he authentic C aribbean m enu includes such deli cious offerings as: C urried C hick Peas - Curry. O nion. G alic.
