One of the recent gradu­ ates is Heidi Earnshaw. The table in the photo to the right is one commis­ sioned by Janet Rosenberg. The Toronto landscape architect was hon­ oured with Arts Toronto's Protege Honours Award. P la n t s e e d s n o w The hot weather is an ideal time to plant sunflower seeds. This thought may bring up a vision of tall stems with 12-inch sunflower heads on top, leaning on a stake to hold them up. This is only one of the numerous new sunflower varieties that come in many colours and sizes. A row of the tall Russian Giant types go neatly against a fence behind some shrubs to hide the stem and foliage. The ripe seeds provide food for squir­ rels and birds. Place a bag over the seed head and see the antics of the squirrels trying to get inside or to remove the bag. Sunflowers, or helianthus, the fami­ ly name, are native to North America. The roots of one perennial variety were used as a food and the variety was named 'Indian Potato.' Another peren­ nial variety was on the menu in Europe in the 17th century and the root named 'Jerusalem Artichoke.' My father grew them in our garden, and I grew some for many years. They are now appear­ ing in health food stores and grocery JOHN SIMKINS In Your Garden stores as Sun chokes. They contain inulin, a different, supposedly more healthy form of starch. There is a newer variety with longer, smoother roots that have a more pleasant taste. The growing of sunflowers took a leap forward when some Russian church goers found that sunflower oil was not banned by the church as were most other oils during Lent. Seeds from America were cross-bred some for oil production and others for large seeds to sell for eating uncooked, out of hand. I became interested in sunflowers for school projects.
